Christmas Roasted Spiced Nuts

These nutty gems are a wonderful addition to your December repertoire. Salt, cayenne pepper, paprika and cumin lovingly coating each nut. The honey and nuts caramelise and turn into something that resembles a decadent spicy nut brittle.

I like to fill jars with spiced nuts, decorate them and give them away as Christmas gifts. They really do make the perfect Christmas snack and work rather nicely with drinks too.

Ingredients:

750g of mixed raw nuts

2 tbsp. olive oil

3 tbsp. honey

2 tsp. sea salt flakes – add more if you like

3 tsp. cumin powder

2 tsp. paprika

1/2 tsp. cayenne pepper

2 tsp. ground black pepper

Recipe:

1 Preheat your oven to 180°C.

2 Pour the nuts into a large bowl and drizzle over with olive oil and honey.

3 Add the salt, spices and black pepper.

4 Mix well to evenly coat the nuts in the spices.

5 Tip the mixture into a large baking tray and spread out evenly.

6 Roast on the middle shelf for 15 minutes, stirring the mixture regularly so that it browns evenly. Keep an eye on them as the nuts burn easily!

7 When the nuts are golden remove from the oven and allow to cool.

8 Keep nuts in an airtight jar.
